  • Mashed Potatoes

    • 1Peel potatoes and cut in quarters.
    • 2Place the potatoes in a pot. Submerge with salted water and bring to a boil. Let simmer until tender (~15 mins depending size). Test if tender with a sharp knife.

    • 3Drain the water. Add seasoning and butter. Mash the potatoes until homogeneous.

    • 4Butter a 13x9x2 baking dish or similar, and transfer the potatoes in it.

  • Preparation

    • 1Dice the shallots, slice the herbs, zest the lemon.

    • 2If needed, skin and debone the cod.
  • Sauce And Assembly

    • 1Preheat oven to 425F or 220C.
    • 2In a cooking pan on melt the butter on medium heat. Sautée the shallots for a ~5 minutes or until golden.

    • 3Add the cream, milk and lemon zest and seasoning of choice. Bring to a boil on medium-high.

    • 4Once the cream is simmering, add the pieces of cod and cook for 60 to 90 seconds on each side while basting. Note that the fish will not be fully cooked yet.
    • 5Add the lemon juice and turn off the heat.
    • 6Transfer the cod on top of the mashed potatoes, and spoon over half of the cream sauce.

    • 7Bring the remaining cream to a boil on medium-high heat. Add 3/4 of the herbs. Reduce the cream for a couple minutes until it thickens.

    • 8Spoon the cream on top of the fish. Top off with finely grated parmesan.

    • 9Bake in the oven for 15-20 minutes.
    • 10Sprinkle remaining 1/4 of herbs. Serve warm.
