1Cook the pasta.
2Prepare the cream sauce: Pour the heavy cream in a skillet on medium heat. Bring it to a simmer and let it reduce halfway while stirring regularly.
3While the cream sauce is reducing : crumble the gorgonzola, chop the parsley, crush the walnuts, finely dice the apples.
4Once the cream sauce is reduced by half : reduce the heat to low, season and mix in the cheese until mostly melted.
5Mix in the pasta. Adjust thickness of the sauce by adding a splash of water if needed.
6Turn off the heat and add the parsley.
7Serve in a plate and sprinkle the apple and walnuts on top.
