Instructions

  • Pesto

    • 1Place the basil, garlic, walnuts and Parmesan cheese in the food processor.
    • 2Season to taste with salt and pepper. Blend. While Blending, pour the olive oil slowly into the mixture (in order to allow the olive oil to emulsify).
  • Sandwich

    • 1Spread the pesto on 1 side of each slice of bread.
    • 2Place half of the bread slices on the grill pan and toast for 2 minutes.

    • 3Add the sliced mozzarella cheese, tomatoes and roasted red peppers on top of bread slices, and close the grill.

    • 4Allow the cheese to melt and the veggies to soften. Once the cheese melts, close the sandwich, cut and serve.
