Pesto
1Place the basil, garlic, walnuts and Parmesan cheese in the food processor.
2Season to taste with salt and pepper. Blend. While Blending, pour the olive oil slowly into the mixture (in order to allow the olive oil to emulsify).
Sandwich
1Spread the pesto on 1 side of each slice of bread.
2Place half of the bread slices on the grill pan and toast for 2 minutes.
3Add the sliced mozzarella cheese, tomatoes and roasted red peppers on top of bread slices, and close the grill.
4Allow the cheese to melt and the veggies to soften. Once the cheese melts, close the sandwich, cut and serve.
