Instructions
Display images:
    • 1Set oven to 400F. Wrap the beets in foil and bake for ~50 minutes or until tender (test with a toothpick or knife). Baking the beet can be done 1 day early, just keep them wrapped in the fridge.
    • 2Peel the skin of the beets and slice them in 1/4 to 1/2 inch-slices.
    • 3Spray your baking dish with the oil.
    • 4Crumble the goat cheese over the beets. Add the crushed walnuts. Season with salt and pepper.

    • 5Bake in a 400F oven for 12 to 15 minutes.
    • 6Drizzle in the lemon juice over.
    • 7Serve over bread.
