1Set oven to 400F. Wrap the beets in foil and bake for ~50 minutes or until tender (test with a toothpick or knife). Baking the beet can be done 1 day early, just keep them wrapped in the fridge.
2Peel the skin of the beets and slice them in 1/4 to 1/2 inch-slices.
3Spray your baking dish with the oil.
4Crumble the goat cheese over the beets. Add the crushed walnuts. Season with salt and pepper.
