  • Bread

    • 1Preheat oven to 375°F (190C).
    • 2If the bottom of the bread is overcooked, cut bottom crust and discard. Cut remaining bread with crust into 1-inch cubes (about 10 cups loosely packed).
    • 3Place cubes in a large bowl. Add oil, thyme, and garlic. Toss.

    • 4Spread the cubes out on a large baking sheet. Sprinkle with salt and pepper.
    • 5Bake for ~20 minutes or until golden and slightly crunchy. Occasionally stir. Once baked, dump the bread cubes back in the large bowl.

  • Stuffing

    • 1Slice the mushrooms, dice the onion, slice the celery, chop the bell pepper.

    • 2Melt butter in a large skillet over medium-high heat.
    • 3Add mushrooms, onion, celery, and bell pepper. Sauté until soft and juices have evaporated (~15 minutes). Dump in the bowl containing the bread cubes. Add parsley.
  • Assemble And Bake

    • 1Preheat oven to 350°F (175°C).
    • 2In a large bowl, whisk the heavy cream, eggs, salt, and ground pepper.
    • 3Mix custard into bread and vegetables.
    • 4Butter a 13x9x2 baking dish or equivalent and transfer the bread/veggie/custard mix.
    • 5Sprinkle grated cheese over.

    • 6Bake (uncovered) until set and top is golden (~1 hour). Serve warm.
