Instructions
    • 1Preheat oven to 350.
    • 2Cut leeks in half, arrange in a 9x13 baking dish, cut side up. Mix stock and olive oil, pour in the pan. Put lemon slices and fresh thyme sprigs on top of the leeks. Cover with foil and bake in the oven for 15min.
    • 3Remove cover, turn oven up to 450 degrees, cook until liquid is almost gone and top is slightly browned, for about 10min.
