1Chop chives and grate cheese.
2Lightly grease muffin tin with butter.
3Preheat oven to 425°F/220°C.
4In a large measuring cup, mix together eggs, milk, and butter until well combined.
5Add cheese, chives, flour, pepper, salt. Stir to combine.
6Fill each tin with batter no more than halfway. Bake for approx. 25 minutes, or until a deep golden brown.
7Cool for a few minutes before removing from pan. Serving.
