1Roll out the puff pastry and cut eight 5” squares. Use a knife to score a ¼-inch-wide border around each pastry circle.
2Fill the center of each square with ~2 tablespoons of goat cheese. Season with salt, pepper and sprinkle evenly with herbs.
3Preheat the oven to 425 F.
4Place chopped walnuts in the center of the goat cheese. Drizzle the top with honey.
5In a small bowl, make an egg wash (whisk an egg with a teaspoon of warm water). Brush the egg wash on the outside border of the puff pastry.
6Bake for 20 minutes, until the pastry is golden brown.
7Remove from the oven and top with sprigs of fresh thyme. Drizzle with additional honey before serving.
