Instructions

    • 1Roll out the puff pastry and cut eight 5” squares. Use a knife to score a ¼-inch-wide border around each pastry circle.

    • 2Fill the center of each square with ~2 tablespoons of goat cheese. Season with salt, pepper and sprinkle evenly with herbs.

    • 3Preheat the oven to 425 F.
    • 4Place chopped walnuts in the center of the goat cheese. Drizzle the top with honey.

    • 5In a small bowl, make an egg wash (whisk an egg with a teaspoon of warm water). Brush the egg wash on the outside border of the puff pastry.
    • 6Bake for 20 minutes, until the pastry is golden brown.
    • 7Remove from the oven and top with sprigs of fresh thyme. Drizzle with additional honey before serving.
