Bread
1Sprinkle yeast over lukewarm water and let sit 5min. Add egg, honey, salt and stir until combined, put in stand mixer bowl. Add flour, mix with dough hook for ~10-15min.
2Finish kneading in well floured surface, shape the dough into a ball and put it in a container, cover with plastic wrap. Leave it in a warm place to rise until double in size, 1hr-1.5hr.
Filling
1Peel and cut purple sweet potato in 1-in slices and steam for 15min or until soft. Mash it with potato masher, mix in condensed milk, coconut milk and honey.
Shape
1Partition the dough into 10 pieces. Roll each piece into a ball, roll it out into an oval. Put a piece of sweet potato filling and seal the dough.
2Roll out the dough into an oval, cut parallel slits using a knife or pizza cutter. Roll it up diagonally into a log, then shape it into a ring.

4Cover the buns and let sit in a warm place for 30-40min.
Bake
1Brush with egg wash and bake in a 400 degrees oven for 15min.
