  • Prepare The Vegetable Mixture

    • 1Cut the potatoes in half, and slice them in thin slices, about ~1/4 inch thickness or 5 millimeters.

    • 2In a large skillet, on medium heat: add the oil, and cook the potatoes until close to tender (10+ minutes). Stir occasionally.

    • 3Meanwhile, cut the asparagus, dice the peppers and onion.

    • 4Once the potatoes are close to tender, add the asparagus, peppers and onions and sautée them until tender.

    • 5Mince the garlic and add it to the pan. Cook 1 minute.
    • 6Dice and add the tomatoes. Turn off the heat.

  • Assemble And Cook

    • 1Preheat oven to 350°F.
    • 2In a medium bowl, whisk the eggs, cream, cheese, parsley. Season to taste with salt & pepper.

    • 3Stir into vegetable mixture for homogeneity.
    • 4Grease a backing pan (e.g 13x9 inch pan), and transfer the mixture in.

    • 5Bake for ~45 minutes.
    • 6Sprinkle with Parmesan cheese. Bake 5 extra minutes, or until the center is cooked.
    • 7Let it cool for 15 minutes and serve.
