  • Prepare The Chickpeas

    • 1Gather ingredients.

    • 2Drain and rince the chickpeas.

    • 3Place them in a medium saucepan. Add the baking soda. Add water to submerge the chickpeas by 2 inches. Bring the mixture to a boil over high heat.

    • 4Lower heat to medium and continue boiling for about 20 minutes, or until the chickpeas are soft and their skin is falling off.
    • 5Drain the chickpeas in a strainer and run cool water over them for about 30 seconds to stop the cooking. Set aside.

  • Blend And Assemble

    • 1Meanwhile, in a food processor or blender, combine the lemon juice, garlic and salt. Blend until the garlic is finely chopped. Optionally let it rest for 10 minutes to mellow the garlic.
    • 2Add the Tahini. Blend until the mixture is thick and creamy (scrape the sides as needed).
    • 3While blending, drizzle in the ice water. Scrape the sides, and blend until the mixture is creamy and smooth. Add more water as needed.

    • 4Add the drained chickpeas and cumin. Blend while drizzling in the olive oil, until smooth and creamy. Scrape sides as needed. If needed, add more ice water.
    • 5Adjust flavors and spices to your taste (salt, lemon juice, …).
    • 6Serve. Add garnishes of choice, and combination of pita / bread / veggies.
