Instructions
  • Sweet Potato

    • 1Preheat oven to 425 degrees Fahrenheit
    • 2Toss sweet potato with 1 tablespoon olive oil, cumin, chili powder and salt.
    • 3Place on backing sheet and place in oven to bake for 20-25 mins till easily pierced with a fork.
  • Corn Mix

    • 1Place remaining olive oil in skillet over medium heat.
    • 2Saute onion for 2-3 mins
    • 3Add corn, black, beans, honey, lime juice and salt and pepper to taste
    • 4Cook for 5-7 mins till warm and flavor full
  • Serve

    • 1Serve as soft or hard tacos by spooning sweet potatoes, then corn mixture into shell/tortilla. Then top with avocado, feta and cilantro and serve with a lime wedge. 2 tacos per serving
