Instructions
    • 1Preheat oven to 350. Place parchment paper on a baking sheet and set a side.
    • 2Stir together coconut, sugar and salt.
    • 3Gently fold in egg whites.
    • 4Scoop onto try in 12 small mounds at least 1.5 inches apart.
    • 5Bake for 20-25 mins till lightly golden brown on edges. Remove from oven and cool.
    • 6If desired when cookies are cool, melt chocolate in microwave or in small pan on stove over low heat until liquid.
    • 7Dip the bottoms of the cookies in and then place on sides while the chocolate hardens.
