Instructions
1Preheat oven to 350. Place parchment paper on a baking sheet and set a side.
2Stir together coconut, sugar and salt.
3Gently fold in egg whites.
4Scoop onto try in 12 small mounds at least 1.5 inches apart.
5Bake for 20-25 mins till lightly golden brown on edges. Remove from oven and cool.
6If desired when cookies are cool, melt chocolate in microwave or in small pan on stove over low heat until liquid.
7Dip the bottoms of the cookies in and then place on sides while the chocolate hardens.
